St Tola Goat Cheese Farm is located in Ennis, Ireland. Siobhán Ní Gháirbhith has owned and operated the farm since 1999. They specialize in making artisan goat cheese. We shadowed Brian McEntee, the Production Manager of the farm, to document their team at work.
